Sweetness Synergy in Binary and Ternary Sweetener Combinations

We are pleased to share MAMAY's latest peer-reviewed study, “Sweetness Synergy in Binary and Ternary Sweetener Combinations: A Systematic Literature-Derived Database and Mechanistic Interpretation.

This research establishes a quantitative framework for understanding how sweeteners interact at the receptor level to produce supra-additive sweetness effects. The findings highlight the mechanistic role of compounds such as NHDC, Aspartame, and Stevia Rebaudioside A in cooperative activation of the TAS1R2/TAS1R3 receptor complex.

The resulting database and mechanistic insights form the scientific foundation of MAMAY Digitizer, MAMAY's data-driven platform for predictive formulation design and optimization.
